Alot of vegan recipes use cashews, and yes it's delish but adds alot of calories too! So here is my new version! Ace and I were in heaven! ⠀ ⠀
5 Small Red Potatoes Chopped⠀
3 Large Carrots Chopped⠀
2 Cups Celery Chooped⠀
1 Medium Onion Chopped [I used white] ⠀
1 Large Roasted Bell Pepper ⠀ ⠀
Boil all veggies until fork tender in water, when done, drain leaving about 1/4 of water left in the pot!
1 Cup Nutritional Yeast Flakes⠀
2 Teaspoons Cumin⠀
2 Teaspoons Onion Powder⠀
2 Teaspoons Garlic Powder ⠀
Himalayan Sea Salt/Pepper to Taste⠀
Parsley from our Herb Garden
Use immersion hand blender until pureed. Mix in or layer over desired pasta!
You can also use for tacos, nachos, dip, lasagna, and really anything with cheese!
I used Organic / Gluten Free Penne [My fav btw] Brand: Ancient Harvest
