Green Tea Eggs • xoxo Mindie 

I used to make these alot more often, but now it's been awhile because I don't make Pho either since it's mostly meat. Lol

But. I'm determined to make Veggie Pho soon, and now started making my eggs again!

Here is my recipe guide!

Boil Eggs - my TIP is add eggs and water, bring to a rolling boil, once boiling shut off and leave sit for 10 minutes. In this recipe, don't peel them. [But for other recipes rinse in cool water and peel immediately.]

In a separate pan, add [slow simmer]

  • 1 cup water

  • 1/4 cup Bragg's Aminos

  • 3-5 Star anise

  • 3 Bay Leaves

  • 1 Teaspoon Lemon Peel

  • 2 Cloves

  • Himalayan Sea Salt/Pepper [Sprinkle]

  • 2 Green Tea Bags

Once eggs are boiled, drain them, then gently tap with wooden spoon to put small cracks in them.

Transfer them into mixture once the mixture and eggs have cooled a bit. Place in fridge rotating every so often to ensure all sides are coated.

Serve in soups, salads, snacks or anyway you wish!
